Vegetable Frittata

Vegetable Frittata


2 tbsp olive oil
1 potato diced
1 Onion sliced
1 bell pepper diced
8 eggs
1/2cup milk
Salt and pepper to taste
1/2 cup parsley


  1.  Sauté potatoes, onions, pepper in olive oil until golden brown. Remove from heat.

  2.  Whisk eggs with milk, salt, pepper, parsley

  3.  Add egg mixture to cooked vegetables.

  4.  Bake in oven on 350F for 20 minutes

  5.  Enjoy with salad and bread of choice
