Cranberry broccoli slaw

Cranberry broccoli slaw


2 medium size heads of broccoli

1/3 cup chopped red onion

1/2 cup dried cranberries

1/2 cup thinly sliced almonds

4 tbsp red onions

1tbsp sugar

3tbsp apple cider vinegar

1/2 cup greek yogurt
1/4 cup mayonnaise

salt and pepper to taste


  1. Peel broccoli stems and cut broccoli heads into large chunks. Thinly slice the stems and chop the florettes into small pieces.

  2. In a large bowl, toss the broccoli with the chopped onion and cranberries.

  3. Toast the sliced almonds until golden brown. Let cool and add to bowl with broccoli mix.

  4. In a jar, red onion, sugar, vinegar, yogurt, mayonnaise, salt and pepper. Cover with lid and shake well then pour over broccoli mix
