Arugula & Spinach Winter Salad
4 servings, Egg free& Gluten free
2 1/2 cups arugula
2 1/2 cups spinach
2 pears, chopped
1 cup pecan, coarsely chopped
1/2 cup dried cranberries
1/4 cup goat cheese, crumbled
*You can substitute arugula and spinach for your favourite greens*
8 tablespoons extra virgin olive oil
2 tablespoon balsamic vinegar
1.5 -2 tablespoon maple syrup
pinch of sea salt and black pepper
1. In a large bowl add arugula, spinach, chopped pears, cranberries and pecans. Set aside
2. In a small bowl, whisk together olive oil, balsamic vinegar, maple syrup, salt and pepper.
3. Pour dressing over salad and toss until incorporated.
4. Crumble goat cheese over salad. Serve and enjoy. Toss salad in dressing and serve.
