Creamy Garlic Dijon Tahini Dressing

Creamy Garlic Dijon Tahini Dressing

Ingredients

5 tbsp tahini

3 tbsp lemon juice

1 tsp apple cider vinegar - Alternative: white wine vinegar or rice vinegar

2 tsp Dijon mustard

1 tbsp honey or maple syrup

1 tsp crushed or grated garlic

Salt and black pepper, to taste

2–4 tbsp water, added gradually for consistency

Preparation


1. Add the tahini, lemon juice, vinegar, Dijon mustard, honey/maple syrup, garlic, salt, and pepper

to a jar with a tight-fitting lid.

2. Shake vigorously until the mixture thickens and emulsifies.

3. Add water 1 tablespoon at a time, shaking between additions, until the dressing becomes

creamy and pourable.

4. Taste and adjust seasoning as needed.

 Keeps well in the fridge for up to 4 days.

 If it thickens in the fridge, loosen with a splash of water before using.
