No Bake Energy Bites

Ingredients

1/2 cup dried cranberries, chopped

1/4 cup walnuts, finely chopped

1/2 cup rolled oats

1 cup unsweetened coconut shreds or flakes

1/4 cup chia seeds

3/4 cups peanut butter

1/4 cup maple syrup

Preparation

  1.  In a large bowl, mix together cranberries, walnuts, oats, coconut and chia seeds.

  2.  Add peanut butter and maple syrup. Using a sturdy spatula, stir and fold together until well incorporated.

  3. If the mixture is too loose or dry, let it rest for 5–10 minutes to allow the chia seeds to absorb some moisture. If the mixture is still too dry, add in a bit more peanut butter or maple syrup. If the mixture is too wet add in a bit more coconut or oats. You want a sticky dough texture.

  4. Using clean hands or a spoon, form the mixture into small balls (about 1–2 tablespoons each).

  5. Place the energy bites in a single layer in an airtight container.

Food Safety Tips:

  • Store in a clean, airtight container.

  • Refrigerate for up to 7 days.

  • For longer storage, freeze for up to 3 months. Thaw in the fridge overnight or leave at room temperature for 15–30 minutes.
